El objetivo del presente trabajo fue estudiar la funcionalidad de hidroxipropilmetilcelulosas y sus mezclas con beta-lactoglobulina en coloides alimentarios. Los estudios realizados muestran que estos polisacáridos en solución presentan un comportamiento complejo que se manifiesta en la asociación/autoensamblaje mediado por interacciónes hidrofóbicas y modulado fuertemente por el pH, como tambien por la concentración y la temperatura. A pH3 la asociación/autoensamblaje de hidroxipropilmetilcelulosas se ve impedida en solución. El grado de asociación/autoensamblaje tambien puede modificarse por la aplicación de ultrasonidos de lata intensidad, impactando en algunas propiedades físicoquímicas de las celulosas. En la interfase aceite/ agua, las hidroxipropilmetilcelulosas, especialmente las de bajo peso molecular, presentan una importante actividad, la cual está modulada tambien por el pH. Las hidroxipropilmetilcelulosas presentan buenas propiedades emulsificantes a ambos pH. En las mezclas con beta-lactoglobulina se observa la misma tendencia con la variación del pH y la concentración de los biopolimeros en las mezclas. Existe distinta interacción entre ellos lo cual afecta su comportamiento en solución y en los coloides estudiados. Asi, el conocimiento y la caracterización de estos biopolimeros permitiran la manipulación de propiedades macroscopicas de productos alimenticios, controlando las interacciónes de un modo deseable, logrando asi la optimización en el uso de los ingredientes. |

The objective of the present work was to study the hydroxypropylmethylcelluloses and their mixtures with beta-lactoglobulin in food colloids. The studies showed that these polysaccharides have a complex behavior in solution, leading to self-assembled structures by hydrophobic interactions, strongly modulated by pH, but also by polysaccharide concentration and temperature. Particularly at pH3, the hydroxypropylmethylcelluloses self-assembly would be impeded. The self- assembly degree could also be modified by the application of highintensity ultrasound that impacted in some physico-chemical properties. At the oil-water interface, the hydroxypropylmethylcelluloses, especially those with low molecular weight, showed a high interfacial activity also modulated by pH. Good emulsifying activity was observed for all the hydroxypropylmethylcelluloses at both pH. The same was observed in the mixtures with beta-lactoglobulin as affected by pH and concentration of componenets. The different interactions observed affected their behavior in solution and in food colloids (interfaces and emulsions). Thus, the knowledge and the characterization of these biopolymers would allow the manipulation of the macroscopic properties of food products and optimizing the use of these ingredients. |
